Pollo Chuco (Fried Chicken) Honduran Style

Pollo con Tajadas or Pollo Chuco is a traditional Honduran dish. Ranked number 2 after Baleadas, another popular dish. Bananas are a main crop in Honduras due to that tajadas or plantains are highly consumed for the majority of Honduran people. Tajadas are served as sides in many dishes as grilled meats, sea food or fried meats. In fact, I really love tajadas! try them!

From the year 2020 a chicken festival takes place in San Pedro Sula to commemorate the national day of the pollo chuco.

Ingredients

  • 2 Pounds of chicken (Assorted pieces)
  • 2 Pounds of vegetable oil
  • 3 Pounds of cabbage
  • 3 Green bananas approximately for each portion or 3 per person.

For pickled onions

  • 2 Onions (red or white)
  • 1 Big carrot (cooked)
  • 1 Cup of vinegar
  • 2 JalapeƱos
  • 2 Beets any size (cooked)
  • 2 Cups of beet juice
  • 1/2 Teaspoon of oregano
  • 1 Tablespoon of salt
  • 1/2 Teaspoon of pepper
  • 1/2 Teaspoon of cumin


To season the chicken:

  • 1/2 Tea spoon of ground bay leaves
  • 1/2 Teaspoons of cumin
  • 1/2 Teaspoon of pepper
  • 1 Tablespoon of chicken bouillon
  • 1/2 Teaspoon of oregano
  • 3/4 Tablespoon of salt

To season the flour:

  • 2 Cups of flour
  • 1 Teaspoon of chicken bouillon
  • 1/2 Teaspoon of cumin
  • 1/2 Teaspoon of pepper
  • 1/2 Teaspoon of salt

For Red Sauce

  • 1/2 Onion
  • 1/2 Green bell pepper
  • 2 Roma tomatoes
  • 2 Tablespoon of butter
  • 2 Garlics
  • 1/2 Teaspoon of salt
  • 1/4 Teaspoon of cumin
  • 1/4 Teaspoon of pepper
  • 1 Teaspoon of chicken bouillon
  • 1 Can of tomato sauce small size (or instead tomato paste blended with 3 cups of water)
